Summer Berry & Poppyseed Salad

I recently had Panera Bread’s Strawberry Poppyseed Salad and loved it! Caleb and I decided to try making it at home and it turned out awesome! This is the perfect summer salad because it contains seasonal fruit and encompasses the “flavors of summer.” Does that make sense? 🙂


Summer Berry & Poppyseed Salad


Ingredients:

  • Romain Lettuce (We used a grouping of 3 bundles)
  • 1 Fresh Pineapple (cut into chunks)
  • 1 package Strawberries (quartered with greens removed)
  • 1 pint Blueberries
  • 1 can Mandarin Oranges (drained)
  • 1 cup chopped pecans
  • 4 tablespoons brown sugar
  • 1 tablespoon water
  • 2 teaspoons cinnamon
  • Poppyseed Dressing (check to be sure brand is gluten free if needed)

Directions:

  1. Wash and chop up lettuce. Be sure to allow to drain well so lettuce isn’t overly wet. Place in large bowl.
  2. Prepare remaining fruit and berries. Drain and add mandarin oranges. Add to bowl and toss.
  3. Combine brown sugar, water, and cinnamon in a saucepan on the stove over medium heat. Then stir in chopped pecans until they start to crystalize. Cool in a single layer on parchment paper. Store in an airtight container until ready to serve salad, then toss in with salad or top individual servings of salad.
  4. Top with poppyseed dressing and enjoy!
