Sweet Beet & Banana Smoothie

I went to make myself one of my favorite smoothies for lunch the other day only to find that we didn’t have enough ice cubes! What I did have, though, was a bunch of frozen beets that we boiled and vacuum sealed from last year’s garden. I decided why not give that a try and it turned out GREAT! It’s honestly my new favorite smoothie and it’s so healthy! Absolutely no added sugar and it’s super sweet after adding the beets!

The beets I used are Detroit Red Beets and were picked when they were approximately golf ball sized. They were picked last year, boiled in water with a little white vinegar after we cut the greens down for approximately 45 minutes to an hour (until we could poke a fork through). We then took the tough outer skins off, put them on a baking sheet and froze them over night. We vacuum sealed them with a food saver the following day! So, when saving your extra beets this year, remember to freeze some for smoothies!


Sweet Beet & Banana Smoothie


Ingredients:

  • 1 banana (any size, cut into pieces to fit into blender)
  • 3 golf ball sized, cooked and frozen beets (I use Detroit Reds)
  • 1/4 cup minute oatmeal
  • 3 ice cubes
  • 1ish cups unsweetened almond milk (adjust to desired thickness)

Directions:

Add all ingredients into blender. Blend until desired thickness. Enjoy! 🙂


To Prep Beets:

Pick, cut off greens so there is only about an inch of stem remaining. Place in water with about 1 teaspoon vinegar and bring to a boil. Boil until a fork can go through easily (about 45 minutes to an hour). Place in cold water and peel outer skin off. Place on a cookie sheet and freeze overnight. Seal & store or use in smoothie!


This seriously is delicious! I’m sure you could also cook beets from the grocery store and freeze in pieces? Just make sure you are using a sweet tasting beet variety! So yummy and so good for you! 🙂
