Cheesy Scalloped Potatoes and Ham

I went to make burrito bowls last night and accidentally started grating the Swiss cheese instead of the Colby Jack. To make sure the Swiss Cheese wouldn’t spoil, Caleb and I came up with this recipe for supper tonight and it turned out great! So… of course… I haaaave to share it with you! When we made this, we made it to be gluten free by using rice flour, but you could certainly use all purpose flour too!


Cheesy Scalloped Potatoes and Ham


Ingredients:

  • 8 cups peeled and thinly sliced russet potatoes (we used the slice side of a cheese grater)
  • 1/4 cup butter, salted
  • 4 tablespoons rice flour (or 3 tablespoons all purpose flour)
  • 2 cups milk
  • 1/4 teaspoon paprika (ground)
  • 1/4 teaspoon parsley (ground)
  • 1/4 teaspoon pepper (ground)
  • 2 cups Swiss Cheese, grated, Use an additional 1/4 cup for topping if desired
  • 1 (8oz.) package cubed ham, precooked

Directions:

  1. Prepare your potatoes by peeling and thinly slicing. We used the slicing side of a cheese grater which worked perfectly!
  2. Grate your cheese (if needed).
  3. Prepare a 9X13inch pan by spraying with nonstick spray and spread sliced potatoes in it. Set aside.
  4. In a medium saucepan over medium head, melt down your butter. Whisk in flour one tablespoon at a time. Once thickened, turn heat to low to avoid burning.
  5. Slowly whisk in milk and seasonings. Allow to heat while continuing to mix for a couple of minutes.
  6. Mix in grated cheese until melted.
  7. Add cubed ham and stir.
  8. Pour over potatoes. Gently mix to combine sauce and potatoes. Spread evenly.
  9. If desired, sprinkle an additional 1/4 cup grated Swiss Cheese on top.
  10. Bake at 400 degrees Fahrenheit for 30-35 minutes or until potatoes are cooked through.
