Banana Muffins From Scratch

This is one of my favorite recipes for very ripe bananas! We have messed with this recipe a lot trying to determine our favorite combinations. We have used blueberries, blueberries and coconut, and chocolate chips! This is a fairly healthy recipe, so it makes a perfect on-the-go breakfast!


Banana Muffins


Ingredients:

  • 3 mashed bananas
  • 1 1/2 cups bread flour
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup canola oil
  • 1/4 cup almond milk (dairy milk works too!)
  • 1 cup oatmeal
  • ****1/2 cup coconut (optional)
  • ****1/2 cup blueberries (optional)
  • ****1/2 cup chocolate chips (optional)
*****I use either the blueberries, blueberries and coconut, or the chocolate chips*****

Directions:

Preheat oven to 375 degrees Fahrenheit. Combine ingredients in order. I like to use my mixer to mash the bananas first then use it to combine all ingredients. When using blueberries, I use a spatula to fold in so the blueberries don’t get smashed. Spray muffin pan with cooking spray or fill with paper liners. This recipe will make 12 regular sized muffins. Muffin cups will be very full! Fill evenly and bake for about 20 minutes.
