I’m a night shifter, so sometimes breakfast for supper is a must! I was really feeling pancakes the other night so my husband decided to put his own spin on a classic. In no way is this recipe complex, but it turned out awesome so I wanted to share it with you! Enjoy!
Apple Pie Pancakes
Ingredients:
- 2 cups dry buttermilk pancake mix (any brand should do)
- Whatever ingredients are called for in your pancake mix, ours only called for water!
- 1/2 teaspoon cinnamon
- 1 cup of cored, peeled, diced apples (about two small apples)
- 1/2 teaspoon vanilla
- Butter (for topping)
- Brown sugar (for topping)
- ??I feel like whipped cream would be good too, but haven’t tried it!??
Directions:
Mix the pancake mix (dry) with cinnamon. Add cored, peeled, and diced apples and toss to coat. Add whatever other ingredients your bag of pancake mix calls for (for us just water) and vanilla and mix all together. Prepare as directed according to pancake mix packaging.
Pro tip: Preheat oven to 170 degrees Fahrenheit and place a cookie sheet in there and use to store prepared pancakes so everyone can enjoy together!
